This traditional Red cocktail was first introduced in 1900. The Clover Club is made from beefeater gin, lemon juice, simple syrup, egg white, and raspberry puree. It is served in a chilled cocktail glass or champagne coupe. A drink called the White Lady was first created at the Bellevue-Stratford in Philadelphia. The Old Waldorf-Astoria Bar Book provides the recipe for the drink. At the end of the 1800s, it was a favorite hangout for literary, legal, financial, and business lights of the Quaker City.
Egg whites are another key ingredient in this drink. They add a lovely foam to the drink for a nice finishing touch. It doesn’t matter what type of gin you’re sipping in the Clover Club. This will pair well with a traditional London dry gin or Plymouth Gin, which has a hint of fruitiness and a fuller body. Lemon juice is a must in this recipe.
Tips
- You will get plenty of juice from a single lemon, about 1 3/4 ounces, so it should make enough for a couple of drinks.
- If your egg looks dry, you may use it to mix. Make sure it’s fresh by placing it in a glass of water. When it sinks, this means that the water is fresh and good to drink.
- If you’re making a limited number of cocktails, just muddle fresh raspberries with equal amount of sugar syrup.
